Even the most basic digital camera today can faithfully reproduce the colors of our world using 16.7 million color combinations, so why black & white photography?   Sometimes "less is more", reducing the complexity of an image allows subtle elements to stand out.   Elements like texture variations, depth, and lighting become modifiers to an image.
